Healthy Nutrition: Summer Recipe with a Chef's Touch

The problem is that healthy food is often associated with excessive simplicity, and no one likes to give up pleasure and flavour when preparing meals.

Refreshing Watermelon, Mint, and Fresh Cheese Salad

Ingredients:

  • 200g watermelon
  • 100g fresh cheese
  • 20g mixed lettuce to taste
  • fresh ginger
  • Seeded bread
  • 1dl low-acidity olive oil
  • balsamic vinegar

Preparation

  1. Cut the watermelon into small pieces and set aside.
  2. Process the rest of the watermelon with some fresh ginger, mint, and pepper to taste. It should have a puree-like consistency. Set aside for plating.
  3. Cut the fresh cheese or mozzarella into cubes, season with salt and pepper, and set aside.
  4. Arrange a little mixed lettuce and small sprouts on a plate and season with a little olive oil and balsamic vinegar.
  5. Assemble the ingredients on a deep plate and complete with small portions of the reserved watermelon puree. Serve with toasted slices of seeded bread and decorate as desired.

 

Tip: Try adding a little smoked salmon.
