The Kitchen: a well-kept secret in the heart of Estoril

The setting for EVOLUTION Cascais-Estoril couldn’t be better: a four-star hotel that excels in quality, comfort, and modernity along the Estoril Coast.

 

And it’s not just because we’re in the Cascais area. Strategically positioned between the historic glamour of the Estoril Casino and the Atlantic breeze of Portugal’s well-known and sought-after Riviera, the hotel stands out for its bold architecture and a hospitality concept that prioritizes a seamless flow between guests and visitors. The setting is one of Urban Chic with a disruptive twist. In fact, this Sana Hotel is not your typical seaside hotel with pastel tones; it’s something much more vibrant and connected. Elegant maximalism, combined with an open-space concept and fluidity, emphasizes textures, metals, and reflections, with the use of mirrored surfaces and metals that give the space a cosmopolitan feel. Vibrant colors (yellows, blues, or oranges) and contrasts between grays and blacks energize the lobby and common areas.

 

It is within this cutting-edge setting that we find The Kitchen, an open-kitchen restaurant that invites us to witness the transformation—under the artistry of the chef and his team—of raw ingredients into delicious dishes.

We had already visited this spot in Cascais to try the EVO Brunch, and at the time, we anticipated what has now been confirmed: the brunch has become a hit. It has been very well received, proving that when information—with the necessary catalyst—reaches the right audience (modesty aside), the response ultimately lives up to expectations.

 

However, we returned to The Kitchen last February, this time for dinner, which revealed a different reality: the paradox of the “Four Stars.” It’s a curious phenomenon and, in a way, turns the art and dedication of those who work at the restaurant and those who promote the value of its cuisine into a real challenge. In fact, there still seems to be a deep-rooted prejudice that restaurants located in four-star hotels are exclusive spaces for guests or overly formal settings. There is almost, one might say, an intimidating effect…

 

But the truth is that Evolution’s décor is a breath of fresh air that invites a sense of shared belonging: a retro-futuristic and cosmopolitan atmosphere where industrial design meets premium comfort. It’s a space that doesn’t apologize for being bold, replacing traditional formality with an urban, tech-driven fluidity—perfect for those seeking style without the weight of classic etiquette; in other words, perfect for anyone and everyone.
