Nestled in-between the luxurious pine forest and gardens in one side, and the main pool of the Resort in the other, the OPEN DECK restaurant-bar and terrace opens for the summertime, to offer, in a cozy and entertaining atmosphere, a day menu with healthier food options and fresh juice list, as well as salads, snacks. And at dinner time, in a charming soft ambience, an exclusive traditional Portuguese culinary experience - grilled fish and meat, from the fresh catches and cut of the day, served with local bio vegetables among other traditional side dishes.

The Executive Chef, Edgar Rocha, aims to present customers with exquisite modern southern Mediterranean cuisine, full of Iberian, Italian and French flavours. Nacido en Cascais, el chef Carlos Cardoso siempre ha convivido con la cocina, ya que creció en una familia de cocineros. Desde muy joven, los aromas, las texturas y los sabores le atrajeron hacia la cocina. El gran hito de su evolución culinaria llegó a los 20 años, cuando conoció a su mentor, el chef Vincent Farges, en Fortaleza do Guincho, con una estrella Michelin. Trabajó con algunos de los mejores chefs y restaurantes de Portugal.

The Mediterranean Restaurant aims to bring inspired Mediterranean cuisine to the forefront, with authentic traditional dishes, served with the freshest ingredients and packed of flavors of the Portuguese and Mediterranean comfort cuisine.
Our chef Vasco Sampaio is dedicated in preparing an authentic and traditional menu which includes a variety of fresh fishes and meats prized by the locals, including, and among other delightful courses, the famous salt-cod, bacalhau, and the traditional lamb, served with their traditional and flavorful Portuguese sides dishes.

OCEAN INSPIRED CUISINE
Espardarte restaurant offers a traditional Mediterranean cuisine valuing the best fish and seafood from local Atlantic Ocean fisheries and presented in a modern way.
Our Chef, Filipe Rodrigues, works closely with the local community of fishermen and small-scale producers, to offer every day the freshest fish and seafood and the best country produce you can find on the market.
Among all the tasty dishes on the menu of our restaurant, we suggest you try the fresh "Peixe do dia" (Fish of the day), as it will always be one of the traditional fish of Sesimbra, or, as a meat dish, the Iberian black pork and, to finish the meal, the best selection of Portuguese cheeses or, for the most gluttonous, the Curd cheese pudding with a modern touch.
Chef Filipe Rodrigues says: "... we have in Portugal an incredible Atlantic Ocean coast and Sesimbra is considered a fresh fish paradise... so it is essential for me to honor and be inspired by the Portuguese Atlantic Ocean cuisine, in its tradition and authenticity, using in our kitchen simply, and in the best possible way, all the ingredients produced on our coast! Our Chef Diogo Medalha is working with local producers, to offer an authentic and traditional menu which includes a variety of fresh fishes and local seafood and meats prized by the locals, including, and among other delightful courses, the famous octopus of Foz de Arelho (from the Atlantic Ocean), and the traditional black pork, served with their traditional and flavorful Mediterranean sides dishes.
Chef Diogo Medalha says: “… it is important for us to value and respect our traditional products by collaborating with the local producers. Having a natural resource close by, the Ocean, we can only celebrate our authentic and flavorful Mediterranean cuisine and share these extraordinary flavors with our Guests and visitors … “.
